When people with celiac disease eat foods containing gluten, their immune system responds by causing damage to structures in the small intestine that absorb nutrients. I found a study by the American Journal of Gastroenterology published in 2006 concerning gluten free diet and weight loss as they found 81% of people with celiac disease actually gained weight while on a gluten free diet for 2 years. He is board-certified in Internal Medicine and Rheumatology. If they do, then ask your physician to test you for celiac disease. But, as the authors warn, more research is necessary to find out if it could be something else in wheat flour, not gluten, that's causing the sensitivity in some people.
