Most microbial activity ceases at about 10°C, and this temperature will kill most, though not all, insects and mites; they will be inert, but will recover when the temperature rises. Most biological enzymes need a temperature lower than -18°C for inhibition. This is why food freezers are kept at -20°C. The literature on the effects of low temperatures on stored food pests is somewhat confusing. As the temperature falls, the activity level slows and finally ceases, but typically death does not occur until a much lower temperature is achieved.
